Crypto-to-fiat conversion is the model where a site accepts a cryptocurrency deposit but immediately converts it into a normal currency balance, so bets, bonuses and limits are all denominated in euros, dollars or another fiat unit. The player sends coins, the platform or its processor applies an exchange rate at the moment of crediting, and the account shows a fiat figure from then on. Withdrawals reverse the process at whatever rate applies at that time. Two consequences matter: the rate and any spread or conversion fee are set by the operator rather than by you, and the amount you get back in coins can differ from the amount you sent even if your balance is unchanged, because the market price moved in between.
